How come Star Destroyers supposedly have like 400 turbolasers or some shit, but whenever we see them in the movies, they’re only ever seemingly able to fire like 4 beams at once?

your mistake is thinking these are two separate hulls connected by a strip of metal rather than a fortified central spar around which different chunks of ship are built off of
