I dunno what vlc is doing with your sound but what you describe sounds like the 5.1 audio is overpowering the dialogue channel so music and ambient noise is way louder than voices. Try another player like mpc-hc? That has proper downmixing.

Dunno if this will work for you (VLC probably won't have this option verbatim) but one day everything sounded off to me. So I searched around and eventually landed on applying 'lavfi=[acompressor=6]' to everything in (MPV) and now it sounds the same as before.
