Major manufacturing companies tend to run some factories 24/7 ie. 24 hours a day, 7 days a week, and they only shut down the factory when major maintenance is needed, or for occasional maintenance, every six months or every year.
Typically, there are three or four shifts of workers at the dactory every day, and always workers in the building.
Certain industries like glass manufacturing facilities and steel foundries, will not shut down large furnaces, because it can take several days or even in some cases a week ir more, to get the furnaces reheated to start producing steel or glass again.
As other anons have mentioned, there were workers who fled when the liquid nitrogen tanks crashed and spilled.
In some factories, the standard safety procedure if certain things go wrong, is run as fast as you can away from the problem. Look up the Pepcon explosion, or the recent refinery explosion in Philadelphia, for examples.
