Actually, I've studied the Apocrypha as well as Pseudepigrapha and Patristic literature a bit. The reasons why certain texts were excluded from the Biblical canon was usually because the Church Fathers, long before the Ecumenical Councils, brought the traditional or attributed authorship into serious doubt, or the texts themselves ran so counter to the tenor and spirit of established Scripture and orthodoxy that they were likely fabricated by heretical sects. The western Church was fairly conservative in their inclusion criteria and took a better safe than sorry approach.

The Council of Nicaea merely formalized what was already common practice, and had been for about two centuries.
