To get Waltz pissed at Candy

A lot of Tarantino movies spend a lot of time and have several scenes designed specifically to make you hate the primary antagonists as much as possible so that it's more cathartic when the protagonist finally goes on a gory murderous rampage. These scene was just meant to make you hate the slave owner more.

I like this scene. It shows the difference between Waltz and Django, in that Waltz has a limit on what he can stomach while Django can handle even the worst barbaric shit without flinching. Probably from his time as a slave.

It is also Candy testing Waltz to see if he is the real deal. Any slave fighter owner wouldn't have an issue with this.

There was a good reason. Waltz was just not going to let Candy beat him like that, even if it was suicidal. After all Waltz saw, dog scene in particular, he just could not let it go.

So Schultz had a reason to act like a retard later on when candy was going to let them leave if he shook his hand

The point of the movie is that Django, after being given freedom, starts to disassociate himself with the slaves. He's free, he doesn't give a fuck about some nigger getting eaten by a dog. It takes Waltz and his morality to shake Django back into feeling some sympathy for his past situation.
