From what I understand, Brie is a quintessential American cheese. Sure it's a french cheese but it's not too popular here whereas it's huge in the US (source: my American ex). I think it's fine to bake it, baked cheese is not a sin whatsoever. It'd be a shame to do it with a good piece of cheese but you guys only get pasteurized shit so might as well bake it
