The texture work on the JP screen is really showing its age. Very low res and blurry. The JW screenshot is more detailed despite being a smaller size. Put the 2 images side by side, uncompressed at 4k.

The special effects look flawless compared to recent movies like Black Panther or Justice League
JP CG was based on live models, sometimes downsized or life-size, in some cases blended with the model. They were experts in the craft. In JW it is all computerized, like the clone troopers in Star Wars. The exception being the dying dino that was a puppet.

1080p blurays were the peak for 99% of films, even then most companies aren't bothering with anything like color grading to actually make them look good

Really, the impressive effects of Jurasic Park are the work of some of the best artists and technicians of Hollywood at that time: Dennis Muren, Phil Tippet, Stan Winston, John Bell... mixed with Steven Spielberg's amazing direction, the John Williams' score and the memorable sound design. It's just a lot of good-old talent working together. That's why, despite showing its date in a few things, the movie it's just a superior spectacle than the modern JP films.

That's because in JP1, all the CG dinosaur scenes were animated in stop-motion by Phil Tippet first. Then the CG animators basically mocapped/rotoscoped his existing footage with the CG models. Tippet, an experience danimator, did all the animations and nuances for them and the CG animators didn't have to try and do any of that themselves.
