Why do they seem to constantly keep the engines on? They are in space and should just continue traveling in the direction they were without applying force.

Because starting Matter/anti matter engines are a pain in the ass. Better to never shut them off.

Presumably they make a lot of adjustments to speed as they go that would make turning them off pointless.

lights on engines in star trek are more like power leds and less like engine exhausts.
