Most of the food in MREs is simple and heavy in the salf and sugar (preservatives). So let's say a piece of ham with some crackers, sugary peanut butter, Tang, coffee and freeze dried fruit. This is all reminiscent of standard boomer food the kind of crap you'd see served en masse at a Hometown Buffet/Cracker Barrel type restaurant.

Botulism develops under specific conditions, so it's not common. The human body can probably tolerate a lot of bacteria species in reasonable amounts.

The episodes with MREs from the last few years suck. They're filled with consumer goods that aren't interesting at all. What is slightly interesting is the packaging most of the foods use today was developed at Natick. Which is the reason why so many commercial products can go into rations.

Once again the U.S. provides a massive benefit to the rest of the world.

After you've seen 10+ reviews you get a good idea as to what has been going into military rations for the past 70 years. Canned meat, bread, candy, and coffee. It's not really a surprise or all that interesting when he opens them up because you know what's in it (plus like 90% have the contents listed on the outside so dumbshit soldiers know).
He seems to have a wealth of knowledge on the subject, but we get very few insights from him. Compare him to Ian from forgotten weapons who will talk about the gun, but also give a ton of history surrounding it and the time period it was used. I'd like to see Steve branch out into that direction at some point. The rations themselves are boring, but the history and even the technology to make them is interesting.
I like Steve, I just think his current approach has a limited appeal and he's wasting some of his potential here.

The video where he tasted Civil War hardtack is hard to beat. The history is great and his description is pretty funny as well.
