The showrunners confirmed that no one in the wild west ever said the words 'fuck' or 'cocksucker' in such a frequent manner and that Deadwood's decision to have the characters swear to such an extent was purely creative and done to make the setting more 'relatable' for modern ears.
Coen Bros' remake of True Grit is probably the closest and most realistic depiction of how actual americans in the wild west talked.

They were aware of it, but it wasnt used as ubiquitously as we use it today. Instead of using fuck, they would say silly things like "tarnation." The writers of deadwood rightly realized that this would make the series hard to take seriously for modern audiences so they took some liberties with the language in order to maintain the intended effect of the dialogue.
