That's kind of the point. The series was commissioned to be another generic mecha series to sell some toys to kids. That was literally the pitch. Hence the same usual setup of male MC pilots super mecha and is surrounded by the usual girl harem exactly like countless other series of the time. Anno took it and did something special with that.

It's not a good or bad ending, it's open ended. Humanity can be reborn if the rest choose to do so like Shinji and Asuka, but we don't know if they do or not. I guess even if they don't humanity is still reborn though, it'd just become really inbred after a few generations.

You didn't watch the show. Outside of Asuka and rei, none of the female characters are in love with shinji. And even love is a bit underselling the complicated feelings those two have for him.

Shinji is stuck in a time loop kind of like Donnie Darko. His relationships with the other characters are all carried over from his previous realities. Rei is doomed which is why Shinji keeps going back, but no matter what he does he can't stop shit from going sideways. He himself is not even aware of the change in reality after it happens but his angst and depression from all the trauma in his previous realities won't go away, and he won't stop hitting the reset button during third impact until he accepts that Rei is a cosmic fluke that must be allowed to self correct.
