The show is based on a movie from the 70s, the reason for the setting was probably just that Western were popular at the time.
The park in the movie was a LOT smaller but also had medieval and roman areas.
Iirc the sequel also had a scifi setting and more.

Yeah S2 undermined the shit out of itself and S1. there was too much of an attempt to repeat the same twists S1 was popular for. Also consciousness in the robots was handed out like candy instead of being a really meaningful question. Plus a fuckton of narrative hypocrisy where they expect us to cheer Maeve mind controlling/killing robots and hate humans for mind controlling/killing robots.
