The dad had done experiments on himself but never yielded any results. So he hit himself with the gamma radiation and the naobots. Essentially it's like wolverines healing, is what they were trying to make in people, in the frog. Rapid cell regeneration. It activated the dads old genetic fucking and made him absorb all kinds of energy into his cells.
The nanobots are meant to go to physical damage and respond to it and mend and heal it. So in dad they got messed up cause of his weird DNA. In Bruce the nanobots seem to respond to emotional damage and when he gets angry they try to repair his body by using the gamma radiation that seemingly should have could him, but also maybe saved his life.
honestly the hulk 2003 movie is deep as fuck, dont' feel bad not getting it. It's not a simple "the bomb turned him green"
