It's not just monster of the week, every episode is driving the characters to where they are at the end of the story and fleshing them out progressively for you the viewer. Even shit episodes like Magma Diver.

I felt this way too and it really irritated me. I enjoyed the characters but I felt the plot was never engaging enough until episode 20 but it seemed like there was tons of information the show wanted me to already know that I did not get before that point to really enjoy the plot advancements.
Never fully understood what happened in the second impact, what lilith and lillin were and what the differences were, what the tree of life was or why people popped into goo in the movie. I also couldn't really fathom the third impact because I could not tell what I was seeing was really happening or more abstract concepts. Like were Shinji and the dumb read head girl the only two people left "alive? Was the rest of humanity the goo/blood that was inside the giant Rei? What would happen after and what were the actual effects?
I totally understand and accept the idea that I just never got it because clearly that's what happened, but it severely hurt my enjoyment of the show

I mean I also watched it pretty recently and didn’t enjoy it very much, but I can appreciate a 15 yo that’s struggling with self acceptance and pessimism would be very satisfied to find some unexpected empathy in his mecha anime. Plus, it has some religious imaginary used in apocalyptic undertones, that would’ve been interesting to see for the first time I guess. But if your way past those basic adolescent struggles it won’t give you much more enjoyment than any other action anime, and will find all the praise and talks of it being deep to be completely overblown.

The bottom line is that if you can't relate to the thought processes being dealt with in those last two episodes, you won't have gotten anything out of the show up to that point, and you won't get anything out of the ending.
For me, watching it for the first time at 31 years old, it was still very powerful because I've been struggling with the same psychological and philosophical issues the show deals with.
The people who don't relate to it are either too young to have experienced these things yet, too dense to realize what's actually going on, or has never put much thought into these issues. There are plenty of people who are simply not "deep thinkers" and only care about the surface level of life. These people won't get anything out of NGE, just like how people who are deeper thinkers don't get anything out of the shallow surface level shows like Big Bang Theory.

eva is not super 'deep' at all, it's mostly straightforward except for the FAR lore and the specifics on instrumentality. that it is super deep is a literal meme and the famous image has even been posted in this thread twice. it does do a better job of characterizing the cliched roles in mecha anime but it's not the first to try and 'deconstruct' mecha. but you are trivializing the other themes explored in the show, especially annos own struggles with depression and ties to other people - when he was experiencing it he was way past adolescence.

first i saw an anime music video of it on kazaa set to offspring's pretty fly for a white guy
it just made it seem like a fun mecha show which my 11 year old self would have been interested in
then i downloaded the show, and as i went on it became more and more engrossing

but as i tried to watch it again today as an adult it felt just as engrossing

That was due to behind the scenes drama:
1. Midway through production, Anno had a nervous breakdown, basically realizing that he had wasted so much of his life being a nerd and started hating himself and nerds. This most likely was based upon how Rei (his deconstruction of emotionless, bland, utterly submissive women in Anime/Japanese pop culture) was embraced unironically by Japanese nerds and even fetishized.
His response was to make the show more gorey and violent and nhillistic
2. There was a major terrorist attack in Japan in 1994, when production on the last third of Evangelion happened that forced them to drop an entire subplot; rumors circulate, this is why SEELE never got it's main goals stated on screen. They were supposed to be outed as a doomsday cult and that they would turn on NERV way earlier than expected, killing nearly the entire NERV staff with nerv gas and forcing everyone to flee to another location with the EVAs, for the final couple of episodes as they seek to protect both Rei and EVA-1 from SEELE and lead to the final episodes taking place in the location where the aliens who seeded life on Earth lived (the "First Ancestral Race"; a plot point cut from the series when the last third got rewrote).
3. Even with the nerv gas/doomsday cult plotline cut, the replacement arcs were super dark and caused sponsors to bail out and the show moved to a late night time slot. In particular, Toji's fate and the episoe where EVA-1 kills/eats an Angel alive and the gorey reveal that the Angels are actually human beings encased in all-concealing armor, scared sponsors and local censors shitless and they bailed/cost the show huge in it's production budget.

4. The final straw was the episode that ended with (due to slashed budgets) Misota and Kaji in bed after having sex. Though the scene was mostly the voice actors talking off-camera while a static background image is seen, it was considered the final straw with censors. So EVERY episode from that point on, had to be submitted to TV censors in script form before being animated.
5. Finally, they ran dangerously close to running out of money. Hence why the last batch of episodes had long scenes of nothing happening/no movement from characters (like Rei/Asuka in the elevator and the super fucking 2-3 minute shot of EVA-1 standing perfectly still while Kawora was in it's hands. It's also why the mindrape episode was pretty much reanimated from scratch for home video release.
And why was this? Because Gainex executives had been embezzling and were caught flat footed when Evangelian was a hit. Even the pulling out of the sponsors and the TV censor problems didn't hurt them; hell, even the move to the late night time slot DOUBLED their audience/viewership numbers. Worse, the cutting of the budget put them in a tight spot so they fucked Anno over to hide the embezzlement as they realized they were fucked and would eventually go to jail when they couldn't hide the embezzling, when they got caught moving around merch money to cover up their theft.

6. The script for Kawaro's death was left vague in the original script. Censors thought he would be crushed to death but the TV version has his head pop off the body when squeezed to death and it landing in the water below (granted, it's not outright shown, only heard via sound effect). This made the censors wanting Anno's head for "lying to them" and made it IMPOSSIBLE for them to run episodes #25 and #26 as originally envisioned.
7. This led to Anno hastily creating the concept of having the last two episoes take place in Shinji's head after Instrumentality takes place off-camera. First to allow them to deal with the now slashed to the bone production budget to use cheap "experimental" animation for the two episodes. But also because, by this point, Anno's breakdown led to him deciding to use the final two episodes to rant about how Otakus needed to get out of the basement and expericence actual real life and this would let hm do so.
The story was just a therapy session. Any lore you can find in the game Evangelion 2 which was barely touched because Anno was making up as he went.

We don't know if it's there's life outside them. The inhabitants of the planet tanged themselves (lost their at fields, and become souls) and got carried in the "Arks" to seek a planet assigned to them to manifest their souls. There are seven seeds of life in total.
Impacts are like childbirth. Violent Terraformation of a planet, and the materialization of the souls the seeds carry. The seeds are neither male or female but are identified as "mothers."
Each seeds have two fruits, the knowledge fruit which allows development and individuality, and the life fruit which gives power and might/healing (almost immortality).
Earth was originally a planet assigned to Adam, but when Adam was slowly making the terraforming it, Lilith accidentally crashed on it. This is called the First Impact. It's believed the pre-history lifeforms were from Adam. For some reason, unknown but hinted wasn't natural, Lilith and Adam lost or have excess of a fruit, life on Adam's case, and knowledge of Lilith, so they made each other incompatible. Anyway, from this first impact, Lilith accidentally gives birth to the lilin lifeforms, including mankind which she never meant to make and wants to undo to start over. Because of the lack of fruit of life, she remains unable to regenerate on the craker she crashed while Adam enters in slumber to avoid the fruits clashing by the failsafe called Longinus.
The Katsuragi expedition sent Misato's father manipulated by Seele to insert human DNA in Adam's core while she's slumbering and remove the Longinus spear - the Second Impact 'caused' by Adam was really a rape by the hands of the human scientists who wanted to control her and Lilith. Lilith and Adam were butchered, have their souls removed and pulled into Kaworu and Rei, to be manipulated by Seele and Nerv.
That was additional footage. It was not in the original release. The VHS did not have this scene, not the DVDs until the re-release extra scenes DVD of the last two volumes.
There are some cooler scenes with Asuka being angry at the bath and walking though shadows as part of her depression etc as well as some additional Kaworu scenes with Seele you might have not seen if you never saw the last two DVDs with the additional footage.

No: People will return from the tang, originally EVERYONE WAS TANGED, angels and lilin (which are animal, plants and humans) have the same origin: the first ancient race. EOE is still a 'bad end' in the game Anno made a few years later not the worst end, but it basically was Shinji not able to confront his issues and needing the world to end for it, but he has 3 Deus ex machina to pat his ass and fix it: Adam, Lilith and his mom.
The snow falling is on the credits of the latest EoE version to make it clear, the impact reseted the enviroment. That picture of Asuka, and Shinji with Kaworu and Rei holding the world with Kaworu holding the blue earth restored came with that version.

You need to rewatch and read the lore. The angels are basically children, they were born 15-14 years ago (like the pilots, get it? That's why when they try to contact and reach out they take their forms - because they are children). Yes, some want to merge with their mother (like the children are piloting their moms, see?) because they are afraid, angry or confused. Some are destructive because they are scared and confused. Others are just wandering without knowing what to do.
SEELE purposefully caused the Second Impact to control Adam and create the angels who are sacrifices for the ritual to start the Third Impact and seat themselves as gods. They wanted to either control Kaworu to do this for them (and destroy humanity) which backfired because Kaworu fell for Shinji and went out their control, or sacrifice all the angels and pilots to control the ritual via the MPVEvas and Eva 01 who is a Lilith clone, so their backup plan was to plant suicidal thoughts on Kaworu. A lot of this is expanded if Eva 2 videogame which includes the worst end where Shinji never met Kaworu and Kaworu starts an impact that turns Seele into a new hive god in Eva 01 (replacing Yui) while Kaworu laments about the end of the lilin.
All will return. Remember they came from the LCL in the first place when Lilith crashed and spilled on earth. Plus if you notice the cross of Misato rusted and Shinji still remained the same physically, it's a hint that they have fruit of life now I think.

A bit in interviews, booklet stuff in EoE newest edition, and most lore background stuff was detailed in a game Anno got involved with the lore-details and shit called Evangelion II on 2003 (he named it 2 because he thought he would never do a 'sequel' animated, it was not until years later Rebuild happened). It featured serious and comical 'what if' where you can pick ANY character of the show and make them the MC over Shinji and delivered a different Evangelion which in some cases are pretty good. On the course of this, you find out secrets you couldn't have on Shinji's POV scenario (like Kaji's for example, unmask a lot of SEELE shit Misato found out off-screen and why she said "the enemy was always human" aka SEELE was behind everything). Shinji's serious scenario was basically the show, with several endings and outcomes, EoE was one of the bad endings but not the worst endings (which is either Kaworu never meets him, and like random angel reaching dogma), the good ending averts the Impact and for that you need to have Shinji persuade Kaworu not to be suicidal and to get Rei III choose her identity as Rei so it cockblocks both SEELE and Gendo plans before they hatch. Sure Lilith and Adam cockblock them by choosing to give the control of everything to Shinji but at this point Shinji is mindfucked and emotionally unstable and is like EVERYONE DIES, and so all tumbles down until he collects himself in EoE.
Anno explained he sees EoE as a multiverse, so the game kind of brought out the multiple scenarios thing. You peel the secrets small or big and discover the truth behind it.

Episodes 25 and 26 are not MEANT to match the movie 1:1. It's an AU ending according to one of the booklets that came in Japan.
Because Gendo is never tanged, he's rejected and dies. His soul is never part of the process. The TV ending is described as more controlled by Gendo than Shinji afaik, so he reunites with Yui instead of being rejected and slain by her.

Eva is basically a cult series where all the core fans have hashed out a kind of mutually agreed upon general interpretation that's only sort of supported by the actual series, but which they've pushed into a kind of default accepted view that sort of acts as its own canon which they act like is just obvious and which anyone should come to independently.
