It's a combination of people who are hooked by nostalgia who also want something new, and who also want to indulge in that nostalgia without being seen as juvenile. Animation is still stigmatized as largely being 'for children' in North America, so making old animated movies live action circumvents this to some degree giving it the air of being more 'adult'. Moreover, the move to live action inevitably brings with it some changes, adding that new coat of paint to help scratch that itch for new stimulus.
