It's probably meant to parallel Rey. Rey, strictly speaking, was never specifically taught how to follow or be a Jedi by Luke, she just got vague lessons on how to feel the force in general and that the Jedi aren't all they're cracked up to be. So the only Rey is able to learn from the Jedi and take after them (if that's what they're doing) is through the old texts she stole. It's probably going to be similar for the Sith Troopers - whether they're force sensitive or not, or under the command of Kylo or the Knights of Ren, they probably found books/temples with inscriptions/who knows what telling of the Sith Empire/teachings of the Sith and are basing their new army off of that.

Right is basically left but not designed by a 10 year old. The pouches on right actually seem to hold things, the armor looks way more practical and functional as a whole, the doodad sticking out of its head looks like an antenna or actually attached to something, the armor doesn't look like plastic, etc. Clearly some inspiration from modern military but obviously sci-fi flavored, while middle is full on SPACE. I'll go with right for what a "Sith trooper" would look like while middle is OK for some kind of spacefaring mercenary.
