CGI is more expensive than practical, but it's easier for directors to do. CGI looks fake when the VFX studio gets rushed, like with most MCU movies. It can look amazing when the filmmaker lets the VFX team take their time, like Cameron did on Avatar and Alita, or when used to enhance practical effects, like in Mad Max: Fury Road.
CGI is a tool, it should be used when necessary by people who know what they're doing, not as a crutch by lazy people.

user, you have to texture all that shit, calibrate the lightning and shadows, care about physics and reflections, and so on. It is not the same amount of time, doing the CGI is WAY harder. Directors only do this because they are trowing the problems in the hand of CGI companies underpaid slaves, instead of putting a set together by themselves and make small decisions.

mounting a set: forced to hire people to do it within a certain time frame, likely to fail or do it wrong and cause production delays
cgi set: make it at a more reasonable pace and able to change it on a whim without having to gather all the crew and cast to reshoot a small change.
