To get a little off topic the common people have never had much influence over politics - most people were basically okay with the Romanovs, the Bourbons, and having the 13 colonies be under British rule. Both Robert's Rebellion and the War of Five Kings show that like 95% of the houses choose their liege lord over the crown. The only exceptions were a few Vale and Stormland houses plus the Darrys who chose the crown, and there's also the Boltons and Freys (which are rooled by cartoonishly evil men) who are only loyal to themselves.
Though it's completely ridiculous that Robert had to deal with a few rebels who chose the crown over him despite Aerys wanting his head for no reason; same with Jon Arryn despite being a beloved liege lord but fucking Renly and Mace get the entire Stormlands and Reach to completely shit all over the line of succession with no opposition.
The Twins only need to be crossed when going from the North to Riverrun or the other way around.

Well Rhaegar was extremely popular and despite the mad king I think a lot of the houses were holding on.
Compare that to Joffrey who was obviously a completely unstable Lannister puppet with zero backing from anyone but the Lannisters (he'd already pissed off half the continent) I think it's pretty reasonable that nobody wants to side with what appears to be an equally unpopular and losing cause. Especially seeing how popular Renly was.
Also note that the Tyrells hold on the Reach isn't that strong and there is definitely conflict brewing under them, which didn't show initially since obviously the unhappy houses can't just straight up betray with no viable external power to side with, bar a massive conspiracy among them.
