Mostly photography, video production and filmmaking stuff because that's my area after all, and I spend a copious amount of time doing research on the subject and learning more to improve my skills. I also get a lot of science and engineering stuff, because although I'm not in STEM I'm curious about how things work and I like to understand it in popular terms, how things work, etc.
Then there's the history and, recently, military history videos, DIY stuff, productivity tips, some lectures about philosophy, literature and the humanities, but I don't like those because I don't usually watch them without following a pre-established study plan.
On entertainment I usually get east coast comedy stuff (YKWD, O&A, legion of Skanks, Cum Town clips, etc.), Let's plays from Funhaus and RT in general, a few vlogs like Rose and Rosie that I like to watch when I'm feeling particularly tfw no gf. Also tons of interesting pop culture stuff because I love those, like cool interviews, lost footage, clips, interesting trailers, etc. For example did you guys know that Shadowrun had a live action promo in the 90s with real actors dressed like Shadowrun characters and a 3D sequence of its hacking system? Check it would, it's pretty cool.
I'd say my Youtube recommendations reflect a curious, somewhat intelligent but ultimately lonely and socially awkward man with lots of free time on his hands. I get casual reminders of my loneliness, like when Youtube recommends me Bushcraft videos, which I did try to get into once, but eventually gave up because no one from my social circle wanted to do it with me and I just felt like an undesired weirdo that can't connect with people. But I guess that's life.
