They actually explained that in Babylon 5. Originally they wanted tons of weird looking aliens. Eventually they realized doing that cost too much so they resorted to just doing humans with face makeup.

in Star Trek they explained it that one of the first species in the galaxy seeded the galaxy with their DNA thus creating most of the species that resemble them.

Yes. Odo establishes very early on that he's a bad shapshifter and can't do faces. Then when he meets the other shapshifters they come out of the great link formless and take a shape familiar to him. It's not outright stated until later during the Dominion War.

One of the Wylans asks her that question in a later episode and she states that they do it because they really want Odo back and the play doh face makes them look like family.

Changlings also replace many members of Starfleet during the Dominion War. They CAN do perfect imitations. Hell, Kirk and Mckoy meet a changling that imitates Kirk in Star Trek 4 The Quest for Peace.

Honestly, the reason they can't make a ship is likely just the physical stresses would be too much. While they have no problem imitating a wine bottle or table, and can easily take on the form and power of a gorilla, making something capable of withstanding the insane forces associated with FTL space travel would be an entirely different thing. The energy they use to transform comes from subspace, so there's also a chance that there's a hard limit to either the amount or bandwidth of energy than can pull from there.

Laas in Chimera shifted into a life form that lives in space. We don't actually see him do FTL, but he presumably does since he's able to travel to the Bajoran solar system.

You should therefore assume that Founders can do FTL on their own, without spaceships. It might be difficult or tiring though.

We've seen what happens if you shoot a Founder with a phaser. It's not pretty. They're not invulnerable.

Turning themselves into ships would just make them bigger targets. It's better to hide inside ships, which have armor and shields.

That's a really good point. Presumably though, IF a Founder could create a body that could withstand the stress of FTL travel (and I think you're right that Laas must) then that body would likely be able to resist phaser weapons. It seems more likely that the creators/writers simply didn't think about it and that if the plot needed it a Founder could become a warship. I'm sure there's a long, detailed post on Memory Alpha about why that can't happen, but Founders can imitate functional 24th Century quantum computers, comms badges, and shield projectors, so I assume anything is possible.

It really isn't necessary, because the Dominion pumps out ships from their shipyards faster than anyone else.
