Alright, assholes. Here is the tipping argument made as simple as it gets

Serving is slightly more difficult than it is, especially if you're good at it. It's also stressful and soul torturing. The only reason polite, concise, and efficient people exist as servers is because of a tipping system.

Now, if everyone in America stopped tipping, waiters, waitresses, and bartenders across the country would all quit their jobs. One of two things would have to happen to refill the gap in labor.

Situation 1: Wage is raised to minimum. The only people willing to work at minimum are convicted felons, illegal immigrants, and teenagers just starting into the job market. This is already true for the service industry mostly, however the most "civilized" parts of society are servers, and this is because they are the face of a restaurant. Restaurant experiences all across America would be much worse than it is now.

Situation 2: In order to make up for food costs and NOW labor costs, the prices of going to some place as simple as Chili's rise in price while remaining the same in quality. People would stop going to restaurants entirely, and few would exist that are meant for the masses, causing a split between common fast food restaurants with no real service at all, and fine dining establishments where the prices are already artificially set to high anyway. Much like America's population, the middle class restaurants would erode.
Think about how often you go to a restaurant. Think about what could go wrong. Think about what possible steps a server takes in order to bring your food to you in a concise fashion.

Every little wipedown they do on plates to make sure they look well before it gets to your table, every time they send food back that looks like shit before it even exits the kitchen, every little prediction they make about you and your companions so they can prepare for what inane requests you may have, such as napkins and drinks.

I worked guest relations at an Indian casino for a year and made fucking bank. When people are winning they tip twenties at the end of the night just because you brought them like 5 beers. There's a lot to do with America's population, diversity, short history that would make a socialized form of service not work as well as it would in Scandanavia.

Probably the biggest part of being a server is being the servant. The whole concept of a restaurant guest is being served like a royal with his butler, but multiplied en masse for every yahoo with an American Express card. We have to alter our personality and act like psychologists, analyzing every part of you and adapting to what you would find pleasant. We're like the background noises in a movie, you only know what goes wrong because if we've done everything right, nothing is noticed.

Line cooks are not tipped because their job isn't to put their best work into every bit of food they make, it's to make adequate food at a quick pace and make every dish look exactly like every other dish. Their work is repetitive and does not depend on an adjustable level of quality, simply input and output. Tipping automatons doesn't make them work any better than they already do, it only alters a mental cost-benefit analysis which is already done by an hourly wage. Servers work with people, and people are notoriously diverse creatures. You can't quantify a server's quality by time or number of tables served. Measuring a server by their service would be a hassle for management, which is why tipping exists, so customers do it automatically.
