Yeah, I watched James Rolfe's Godzillathon review of it, it seems pretty fun but don't I have to watch the others of the millenium series too beforehand to know what's going on?
nah. the continuity has always been pretty loose anyway, but the Millennium flicks were never straightforward sequels (apart from GXM to Tokyo SOS), more like soft reboots mostly ignoring everything except certain aspects of the 1954 one.
generally though, it really doesn't matter, if you wanna put on some Godzilla just look up plot outlines, maybe pictures from the movies and check out what looks fun or interesting. don't worry about continuity. Toho sure as hell didn't.

it has the complete series subbed, and the "bonus material" folder contains a number of the dubbed US cuts. IIRC it's not all of them, but Ghidrah is included.

The 90s Heisei movies and Godzilla 2000 are your best bet if you want a lot of Godzilla screen time
with G2000 you get bored with it during the first 10 mins or so though, it's so tediously filmed and paced (the Japanese cut is, anyway)
The American cut is universally agreed to be better and faster paced even by the Japanese. Sound editing is also vastly better.
Not a whole lot in Astro because Honda was kind of forced to squeeze Godzilla in. Him and other monsters are integral to the story but they don't have that much screentime. Ghidorah has plenty of monster scenes. Feels like Godzilla also is in it a lot but he has to share the screen with three other monsters.
This. The Sony version is the only way to watch Godzilla 2000. Okawara's Godzilla movies were never good. People who only care about monster aesthetic sadly perpetuate this meme that his movies are some of the best.

The heisei not so much, millenium has a lot more, GMK has more monster action than most
