This any good? I just got HBO GO and wanna start a new show, can't decide between this, Fargo or Mad Men

They're all good tbqh. I'd watch them in this order:

1. Fargo S1 - Crowd pleaser, very easy to watch, not too long. Good sense of humor and sense of style.
2. Young Pope - Very powerful and philosophical, but much more divisive. Also pretty short.
3. Fargo S2 - Similar to S1 but not quite as memorable.
4. Mad Men - Great show, but it's a slow burn and there's six seasons.

Don't watch Fargo S3.

And if you like The Young Pope, watch The LEeftovers next.
