Can’t we just assume Ned’s father was pretty decent as well and they might love Ned initially for his Father’s sake? Then Roberts rebellion didn’t touch the North at all and just won them vengeance and glory. Then Ned had a prosperous peacetime rule that coincided with a really long Summer.
That’s really all you need; looking at the other houses, the bar is set pretty low.

North is completely unrealistic, as is anything pertaining the Starks' rule and the people's love for them and continued loyalty.

I know the showrunners don't like the Stannis character and love Lena Headey, but they just had no explanation for why Cersei was on the throne. The King's Landing plot was so thin that she doesn't even appear in two episodes in a six episode final season, and she appears as a corpse in one of the others.

There have been other rebellions: from the Skagosi, in the lands now held by Karstark, in the Rills. The point of mentioning these briefly is to show that there's a variety of events and conflicts, as there should be in a history thousands of years long. You can picture rebellions from Manderlys, Umbers, Cassels, etc., unless someone is specifically mentioned to have always been 100% loyal. But ultimately the backstory is there to serve the present story, like how the story of Wolf's Den is told to develop the Manderly situation. The Boltons are the primary northern rivals to the Starks and the backstory is developed to reflect and amplify that, with a long history of conflict. Doesn't mean other houses haven't rebelled

Ironborn have a richer history featuring more issues, battles, usurpation and strife than the Starks and they're not the evident main House and true protagonists of the story. House Targaryen in their rule have more and that expands on every other house, except Stark who are always fine unless the Targaryens fuck with them like sending men to the Wall who cause problems and that one Skagossi rebellion.

The Targs try and fail with dragons to control the six kingdoms and even after they lose dragons and lose it all within 300 years, while Starks controls someplace just as large with less military power for thousands with fewer rebellions, no usurpers, no mad kings, no incompetent kings, no religious nut kings who sacrificed thousands to the weirwood, who lost a lot of territory, no major internal issues.
