I am in favor of Jonerys, but the way it was handled in season 8 was baffling and lazy. Did D&D not realize that making Jon treat Dany like shit undermined the tragedy of the ending? People think that Jon never even loved Dany, and it's hard to argue against that after season 8. Almost none of their relationship carries over from season 7. Jon doesn't even tell the truth about why he bended the knee.
I guess the simple answer is lack of interest. D&D imposed 13 episodes on themselves (they wanted 10). They knew their ending was flimsy, so they didn't address why it was flimsy. They didn't care that Cersei had no business being on the throne. They didn't care that their wight hunt is the reason The Wall fell. They didn't care about making Euron interesting. They didn't care about maintaining the intelligence of Tyrion or Varys. They wanted to make Sansa smart, but they failed massively and made everybody else dumber in the process. They intentionally lied about incest to justify Jon's behavior, and it still doesn't make sense because Jon never explains why he feels the way he does. Their decisions are just baffling. If they didn't care anymore, why not hire people who do? They cared more about how popular Game of Thrones made them than they did about the legacy of the show.

I feel that a lot more things went wrong than simply laziness and incompetence.
First of all the lack of source material meant that they were blindly heading towards an intended ending that Gurm himself seems to have no idea on how to get there, otherwise there wouldn't be 8 fucking years and counting since the last book.
Also, they tried to juggle way too many things in way to little time after spending the slightly longer S7 season in a lot of inconsequential stuff like Cersei's meaningless victories that get undone the second a dragon joins the fray, Sam cleaning up shit at the Citadel just to figure out what Stannis had already told him and what Bran could have figured out by himself, or Arya and Sansa bitching at each other until they decide to do what Jon Arryn should have done 20 years before.
There was also the additional problem of Jon and Dany becoming so central to the plot that they had to make up stupid bullshit to make other characters relevant like Tyrion being incompetent until deciding to murder Daenerys, Arya getting to kill the Night King, Sansa trying to get Northxit to happen even when they were all about to die.
