The originally only had the skull of a leopleurodon, and because of this they needed to estimate the size of the body from the size of the skull. To do this they compared it with animals such as crocodiles and other sea predators. However it turns out that leopleurodon has a very large head relative to body size, based on more recent discoveries, so the size of the body was overestimated. Doesn't change the fact that the thing has a huge head and set of jaws

Dinosaurs aren't as popular outside the Jurassic Park/World series I guess. But BBC did manage to turn the original show into a successful TV franchise during the early to mid 2000's. ITV also made a spin-off based on those shows (Prehistoric Park) and a scripted drama (Primeval). And of course Discovery Channel made several more of those dinosaur documentary with cheaper CGI.

We'd understand it was a feline, of which we have many extant and extinct examples to compare to. Even if there were no extant examples in the same family, we can use techniques like phylogenetic bracketing to determine some of these characteristics. We'd also be able to make some judgements based on climate and utility, informed by modern animals or those in the fossil record with skin impressions, which we might collect for this species as well. There is always going to be some uncertainty, but we have a multitude of different ways to estimate these things. The reconstruction of the cow above was at least reasonable in how you mischaracterize some features, but simply illustrating a cat in supposed-to-be-ridiculous lizard skin is just dishonest.

If my Google-fu is correct, the book these examples are taken from is pretty meh in their presentation. The elephant is one such example that gets thrown around a lot, people wonder if we'd be able to reconstruct their trunk. My understanding is that it's clear that there should be something there - there are a lot of anchoring points on the skull indicating a large, muscled appendage. So while they would probably have a hard time reconstructing an actual trunk, they'd be able to say "there was something significant here" and apply plausible speculation based on extant creatures with similar anchor points, assumptions about what such an appendage would be needed for (near the mouth, so food?), etc. They wouldn't just give it a comical clown nose and call it a day.

Yep, we have infant T.rex fossils. This is actually a fairly interesting point though, because it can be hard at times to tell if a fossil is an infant of a larger animal, or just a smaller animal in its own right. There have been a few species reclassified out of existence as it became clear they were merely juvenile examples of larger animals. Dracorex (famous for being named after the Harry Potter series) is potentially one of these fossils, its fossil may simply be a juvenile Pachy.

Blue whales are efficient. They literally float through the ocean filtering water through their baleen plates practically all day long, allowing their food to pass through, up to 8,000 pounds a day. Eating leafs branch by branch isn't efficient, practical, or even possible.

Think about that. A blue whale, much smaller than the dinosaur we are talking about, can eat up to 8,000 pounds of food a day. How many fucking leafs is that? It literally is not mathematically possible.
