Not all knights were crusading. I think there were more things at play, which may have to do with misconceptions from the enlightenment as well.
The whole knights are super clumsy and had to be put on their horse with a crane thing for example, which is perpetuated with GoT until this day.

People forget that 'Christianity' is a huge blanket term and during the Crusading periods there were huge divisions between the various sects of all major religions. Greek Orthodoxy for example was just about tolerated by the Frankish Crusader States. Certain elements of the Muslim factions assisted the Franks against Saladin because they disagreed with his version of Islam. People always point at the sacking of Constantinople but neglect to mention that the Crusader States had a hugely rocky relationship with the Byzantine Empire, they weren't best buddies and then the Crusaders just randomly attacked them, the animosity had been building for years.
I mean the Battle of Hattin was only a failure because Raymond of Tripoli (and others) were literally turncoats and fled the field with their knights, leaving the weakened Frankish forces to use the Knights Templar as a rearguard, resulting in all of them dying prior to the battle and it also crippled the Franks ability to successfully use their heavy cavalry with the numbers needed to punch through to Saladin (A tactic that had worked on a previous occasion).
