I watched these in the theater forever ago. Was thinking of a rewatch. Do the extended editions add anything meaningful? Or is it just fluff that only hardocre ring nerds would get?

Watch the extended editions. Right off the top of my head I can't think what it adds to the second one but the first and third improve even more from it.

they add about 45 mins of extra stuff per movie. The extra scenes add some nice layering but it really throws off the fast pace feeling of the first 2, and it makes the 3rd one more tiresome than it needs to be.
They're worth watching. Fellowship especially since it adds a bunch of scenes for Boromir.

Extended editions are nice and comfy and add just that little bit extra to make true fans of the trilogy ultimately satisfied. I probably do a full re-watch once a year, takes almost a whole day but it's so much fun.
More Sean Bean is always good.

I like watching the extra scenes of arwyn and eowyn in tight, sheer shalls licking each other while the elves leave middle earth in the background
the extended editions are overall better. They add some great scenes sometimes and they add some so-so scenes sometimes.
In the last film they add the death of an important character, more Witch King, and the Mouth of Sauron. Which are all great scenes.
In the second film they add more treebeard stuff which is kind of lame, but they add more Boromir and Faramir which are great scenes that give the character more depth.
The action scenes pretty much remain the same extended or not, but the added scenes really polish the characters.

Don't watch the extended editions they all have dogshit filters over them, even more than the theatrical versions.
You're thinking of the Bluray version. The original DVD box set of the Extended is the best-looking one.
