Should have made it a plot point earlier that hulk is the only one who can snap everyone back. Start with banner being still unable to summon the hulk. Finding a way to get hulk to absorb the power of the snap should have been a major plot point. Then the super-gamma juiced hulk could finally be a hero and save everyone from the rubble.
Thor's character was completely fucking ruined. What's his fucking character arc? Frat boy learns to become a leader, should be able to carry the burden of the remainder of his people, culminating everything's he learned as a character, but instead becomes a fat, shitty comic relief neet who needs his hammer.
Endgame was an okay end to a decade of universe building with some great parts, but overall doesn't hold a candle to Infinity War.

That happens all the time in the comics, there's like 50 shades of green when it comes to Hulk vs. Banner ratio. There's smart Hulk, Prof. Hulk, Joe Fixit, Kluh, Grey Hulk...
Banner explains it in the movie, after both halves of his personality got beaten by Thanos, they bonded again over the experience and with a bit of gamma radiation created the best of both worlds, Professor Hulk.
He had plenty of reason to try and summon Mjolnir as confirmation of his status. He beat himself up after missing Thanos' head and failing to prevent the snap, he feels responsible for the death of half of everything and became super depressed. He starts digging himself out of his alcohol and cheeze whiz filled hole when destiny allows him to speak with his mother a last time and confirming his worthyness to himself by summoning Mjolnir. In the end, he doesn't need it, he becomes confident again and insists Cap take it while he wields Stormbreaker. He'd still fat, sure, but he knows he can bounce back from that now. His confidence is restored, everything else is a matter of time and effort, which he's willing to put in during his time with the Guardians. In the meantime, Valkyrie takes care as ruler of Asgard - after all, she already overcame her alcoholism in Ragnarok.

Since Thanos was “indiscriminant” there’s no telling how many of each nation/ethnicity/race he killed since the only thing that mattered to him was that half of all life in the universe was cut in half.
