Is Hannibal a Mary Sue, at least in the series?

Presuming you're at least remotely privy to the source material, Hannibal is about what you'd expect, but not including the small stature. In the series.

He is also exceedingly knowledgable. Considering he has read pretty mcuh every book in his private library too, you can only imagine how well he remembers all its content. I bet he remembers everything in all those books.

Not sure what you mean, but what I think would take away his pride is if he is caught by another serial killer that he does not admire (i.e, someone who isn't as good at it as he is), and if he gets in a situation where he does not see any opportunity of escape or advance, then I think his pride would be torn down, and he would feel ashamed and angry at himself that he had to go that way. I'm sure he would feel the same way if he was caught by Agent Crawford who he thinks is beneath him.

But if he is soundly beaten by someone better than him, then I think he would admire the opponent and he would accept his death for some sort of philosophical reason that he thought of.

I think the implication is that in spite of his cultured speech and seemingly calm and rational demeanor he's just as dangerous and deranged as the completely incoherent maniacs around him. It's borne out later when it turns out that after he learned the guy threw cum at her, within the span of a single night he somehow talked that guy into committing suicide, implying that given sufficient time even a conversation with Hannibal could be fatal.

He's, in fact, more dangerous than the outright crazies are. Words are his deadliest weapons.

Because the prison is a setpiece in a movie designed to visually and tonally inform you about the characters and story which are operating within it. The ward full of violent crazies informs you that Hannibal is also both violent and crazy, the movie then throws you off balance by having Hannibal be polite and physically docile during the interview. This strongly contrasts with what the audience is told about him biting off somebody's face just seconds before we're actually shown him. It creates dissonance between what we're told Hannibal is (and what the environment of the prison implies he is) and how he actually behaves and speaks, which (if the movie has done it's job well) results in quite a shock later on when he breaks out of the other prison.

The only piece of media I've seen Hannibal in is The Silence of the Lambs. Can I jump right into this show?

Yes, it's pretty much it own take on it. The end of the run of the show was really rushed and kind of sucks because it just borrows from other Hannibal stories. I would watch Red Dragon and Hannibal (the movies) before the show just cause the way they told the stories was better.

Yes you can jump right into the show, no problem at all. Silence of the lambs is actually about hannibal at a later time in his life than what this series is presenting.

I wouldn't say "jump right into" as in start anywhere. But it's totally its own take, inspired by the Hannibal Lecter books. I wouldn't even compare it to Silence of the Lambs. Mads Mikkelsen's Hannibal is really different from Anthony Hopkins's. Hopkins's seems hokey in comparison.

All of it is essentially prequel to Red Dragon (the first book) but the end up doing Red Dragon as an arc in season 3, along with Hannibal (the third book).

Why is it wrong? The only part of the body you cannot eat is the brain. Other than that, pretty much all of your body, if cooked, is safe to eat. So safety isnt an issue.

If you make a moral argument then you have to enforce your morals on another people, that isn't a moral thing to do, so thats out.

You can't logically break down why it's actually 'wrong'. We say it's wrong because were conditioned to think so and most people feel that way, but every people and culture in history have practiced cannibalism at one point or another.
