i agree with the theory that says that D&D really just wanted to adapt the red wedding and afterwards they just lost motivation with the show, specially since riveting material was becoming dry (feast and dance are boring af, let's be honest).
they are good at adapting and adding their own ideas here and there (tywin+arya, bobby b+cersei, etc) but they basically had to write and connect plots by following grrm's outlines since S4.

ADWD is really good in the sense that it takes a lot of characters who usually have pretty boring-ish chapters and make them really interesting. Take Bran, for example. His ADWD chapters are light years ahead of his chapters from previous books.

It really depends on your taste. Thing is, when people call them too slow/boring, I don't think these complaints would exist if the books were part of an already complete series. I feel like it mostly stems from the huge gaps between books keeping people waiting so they feel that the books they got didn't progress the plot enough.
Anyway, if you start liking the Ironborn I think you'll find them enjoyable on the whole. Jon is pretty interesting in Dance, Bran finally starts getting interesting, Theon is great, Cersei is pretty fun, Brienne is controversial but can be pretty comfy and ends on a big cliffhanger. If nothing else I think everyone agrees Jaime is great.

Lot of good ones in GoT but Light of the Seven is definitely the best. The modified Targaryen music used for Dany destroying the Iron Fleet and that one track they used when Robb and Theon performed executions were also amazing though and perfect for the scenes
