Not all AR-15s have an ambidextrous fire selector.
For example, the Army's M4 didn't have one for the original burst trigger group they had before rifles were upgraded to M4A1 standard.
You can see that there is a selector there though - just not an ambi one
As for the bolt, it's probably completely removed as a safety precaution when filming inside the vehicle. Discharging a rifle inside an enclosed vehicle even using blanks, is very unpleasant.
"Trust me bro: it's not loaded" sometimes doesn't cut it on a film sets nowadays and you can't put in a chamber flag while filming.
