Helms Deep was tense and focused, but Minas Tirith has plenty of variety with many players involved. Orcs, Easterlings, The Witch-King, and Oliphants versus Gondorians, ghosts, and the Rohirrim.

Fellowship is indeed the comfiest of the trilogy. It has a sense of normalcy with the Shire and the taverns before the orcs started chimping out.

Helm's Deep in the movies, no question. The oliphaunts were too bug, the ghosts trivializing the army of Mordor was retarded. (theyre supposed to just svare off the Corsair reinforcements, which admittedly was critical to the battle & otherwise Minas Tirith would have been overrun)

Seriously, the writer and director commentary track has Jackson explaining his reasoning behind the major deviations. The only one he says he regrets was having Faramir be tempted by the ring.
You don't have to like the decisions they made, but they were all well thought out and mostly changed for practical reasons.
I hate the ghost army saving the day, but I also understand why they didn't want to add in another 40 minutes introducing the grey company, and their march through southern gondor raising an army, then stealing a bunch of ships with spooks, and showing up at the last minute.
The same reason the scouring of the shire, despite being my favorite part of the entire series, had to get cut. The general audience was already complaining about how the ending was already too long.
These movies also had to be marketable as films that could stand on their own in a theater.
