The Tyrells have had no dealings with the North, they don't know the North, and even though they're united under the rule of the Iron Throne, Westeros has had a feudal power structure going back to the Andals, which means House Tyrell has no reason to trust the Starks and vice-versa.

IMO there are 2 possibilities:
1. They needed to establish Tyrion as a heroic character. A really weird, consistent theme throughout the show is the ridiculous whitewashing of Tyrion. As part of that, Tyrion's opponent in a grand sense, Stannis, has to seem as evil as possible.
2. D&D genuinely think that Stannis was burning people alive on Dragonstone the first time we see him, rather than just burning statues. If that's what they think then that might color their perception of everything else he does.
He's not wrong though, Westeros has matrilineal marriages depending on the circumstances. If there are no surviving heirs on the male line then the family name passes through the female line, which is how Harry Harding will become Harry Arryn if Robin Arryn dies.
