Ionising radiation (gamma rays and the rest) rip electrons off atoms, sounds pretty abstract at this point. When you do this in cells you get abnormal reactions taking place, in part due to the generation of something called "free radicals" (one of the many reasons for the damage caused).
So you've got a bunch of atoms doing things they don't normally do in the cells causing all kinds of chaos which doesn't sound so bad because cells can repair themselves right ? Turns out you also directly damage the DNA ( the blueprint from which the cell can rebuild ) which in part makes this repair harder but also cells have a built in "kill switch" when it detects itself damage to DNA.

So you now have a picture of cells dying to damage they can't repair, cells destroying themselves and when enough cells start doing this you get some really catastrophic damage.

Ionising radiation is just particles (photons, electrons or nuclei) travelling with great speed hence the bullet analogy, they don't weigh much so you're literally not ripped apart. Getting hit by the radiation doesn't mean you have radiation inside your body but in cases like chernobyl you can get contaminated by the radioactive source (as in you have the radioactive source material on your clothes, inhaled into your lungs etc) so you "carry" it with you continually ionising you from the inside.
