I would say it's because a lot of the time they ARE given more creative control and aren't put under as much pressure to make something mass appealing. Big movies/shows in the west tend to be created in a board room as much as they are created by the writer, director, etc to minimize the risk of not making a financial return. This is why they tend to end up feeling so cookie-cutter and by the numbers.

Also, the creative minds behind anime aren't constrained by a culture where inane things like PC language and diversity are deemed to be of utmost importance (despite not adding anything to the quality of the entertainment in of themselves).

Well I watch a lot of Yea Forums shit and a lot of Yea Forums shit, your issues with avengers, or got or starwars shitty fight scenes is present in a lot of anime, one piece, my hero aca, the narutos, HXH etc.

A lot of those action shows have really filler, flashy action scenes, it's more about looking cool, and characters trading blows while they think about back stories and shit,

Attack on titan is a unique case like a berserk when it comes to action there's a real sense of gravity and danger, if someone gets hit once the whole tide of the fight changes, or they are already dead, the shit you just posted is essentially just a single kill, every single attack matters and is potent, it's not just back and forth attacking to drag shit out.
