Why couldn’t he rewind time 90 seconds and tell Starlord to have some chill? Why couldn’t he tell Thor to aim for the head? Why couldn’t he use the time stone on Thanos, especially given that Thanos was threatening Tony’s life and Strange knew Tony would die anyway?

These movies are lapped up by dummies but even the creators openly laugh at them and admit it makes no sense. The directors and screenwriters have no idea how time travel was supposed to work, they each have self-contradictory interpretations that are completely at odds with one another. They smear this lack of coherency in the audiences’ faces with “I get emails from a raccoon, none of this makes sense XD” and braindead critics fall all over themselves to give it a better score than most Best Picture winners. Incredible

The general consensus is that Thanos would beat the shit out of everyone at Titan if he got angry once they take the gauntlet away.
I mean he fodderized Ironman, Captain America with Mjolnir and Thor at the same time low-mid diff in Endgame. Of course, Dr Strange has some insane tricks, but his power level isn't that high mean he got beaten and kidnapped by Thanos' minion early in that same movie.
But telling Tony to not bring Nebula would fix this... Though, that would give Tony the idea of time travel and things would play out differently.

He really couldn't let out much info in fear of things not working out. He found a safe future and made sure to secure it; remember, he doesn't care about individuals, Strange is not a hero and his words are still true. He saw Tony would day and thought

This. In the comics, Strange let a demon kill a literal toddler to save a city or something similar. The guy really toes the line.

Why didn't Dr Strange just slice off Thanos's head by opening a portal on his neck and then closing it?

Wow, that was a lot better than letting Thanos win and waiting 5 years to do the same thing!

The writers just didn't think of that, they got surprised at the interview when someone asked them and said Thanos was probably too hard for that to work instantly. But it's false since the brute from his team got easily sliced.

You can however make your own headcanon considering alternate universes exist. Maybe it was a bad idea to have all stones together and eventually Galactus or some other villain grabs them and kills everyone 2 weeks later.

Correcting that, Galactus wouldn't grab them but maybe the Avengers decide to store the gauntlet in Earth and the massive energy attracts him or something worse
