D&D really only wanted 3 seasons. That is to say, they only ever wanted to film the Red Wedding. That was their whole motivation for doing the show. 7 Seasons was the reasonable compromise on their part (Red Wedding + 1 aftermath season + 3 seasons to fast-track an ending), which got extended to 8 when they basically split season 7 in two to give much more time for the finale events. In other words, -their- idea was for it to be even more rushed.
GRRM wanted 10 seasons and HBO wanted as many as they could get. HBO would have literally let the series go on indefinitely like a soap opera, which is sad because if GRRM were involved, it probably could have dragged on until he died. The quality would have varied as it does in the books, but the ending would have made much more sense with at least 10 seasons.

In retrospect, as much as I loved the scenes with Arya and Tywin in Harrenhal, and as brilliant as it was to see Charles Dance get more screentime, it kinda hurt Arya's arc in hindsight by making Harrenhal ultimately not feel like that difficult a time for her. Really after the initial horrible couple of days, she has a really nice time cruising as Tywin's cupbearer, and this is part of the reason why the three names she chooses feel like a waste in the show but are much more understandable in the books, but it also means she doesn't really get forced to adapt in order to survive which is why her arc leans more heavily on revenge in the show than on survival.

Euron is obviously important but doesn’t show up until later; his late appearance doesn’t make him irrelevant either. The story isn't all about the ending, and there's a lot to be said in ASOIAF that has meaning to the reader that doesn't necessarily influence the story in the end. For a story as long and as character focused and world-building heavy as ASOIAF it makes zero sense to even contemplate editing things out because of plot-significance.
