You realize that they take minutes to aim and an entire crew to operate? Those balistas would be useless in against a dragon in real life. Euron killing Rhaegal was beyond retarded, especially since they somehow shot him from behind a bunch of rocks.

If she showed up with the impossibly large army she had because D&D kind of forgot they all died he might have surrendered.
But if Tywin knew that Danny kills all who defy her by dragon fire he'd know they were up against a wall and would have to do something very clever to live.
If she came with the army she should have had after a battle against the literally god of death he'd have just leveraged his positions with other great houses and the iron bank to have a large enough army to fight her.
Reminder, her dragon should never have been able to destroy kings landing. Harrenhal withstood an attack by multiple dragons. She could have been waited out.
