When the show was based on the books there were always stakes involved in fights so you cared about the outcome. For example Viper vs the Mountain determined Tryion’s fate as well. In the later seasons it was just random fights with no consequences. If the Hound has lost cleganbowl who cares? Someone else from the victorious army or the dragon would have killed the Mountain later. It’s the difference between professional writing and what you get as a result of nepotism and rich parents landing you in a job you weren’t qualified for.

It didn’t even matter to the characters though, much less the story. If Jamie had died to Euron his life was maybe 5 minutes shorter. If the Hound didn’t sacrifice himself to take out his brother, someone else (probably the dragon who just killed a million other people including Cercei) would have. Their fight didn’t even serve the purpose of distracting the Mountain so someone else could get to Cercei. It was completely pointless.

well the original mountain also thought he could get more money by being in the hobbit and ended up being replaced by a fully cgi animated model.
Another example of this is Arya soloing the Night King. Nothing any of the other characters did, including coming back from the dead, made any difference in hindsight. It's fascinatingly bad writing for a show this size.
