She gets the shits because even when Jon's support is mauled and her troops made the final charge, everyone recognises that Jon was the one who did all the hard work. She is pissy as fuck that Jon brings Dany back to Winterfell for the battle against the White Walkers, knowing that he is going to be seen as the saviour of the north, and world, yet fucking again. She tells Tyrion that Jon is Aegon Targaryen so that a rift forms and she can clear him out. There is no way, no way in hell, that after finally getting Jon Snow out of the way as King in the North and taking power herself she is going to let him anywhere near the place, because she knows that the nobles and small folk of the North are going to be comparing her to Jon Snow, unfavourably, at every turn.

I think the North seceding makes sense.

What doesn't make sense is Yara Greyjoy going "Wait, we can do that? Well fuck this shit, I'm the Boat Queen of the Iron Islands and we're independant now too" and then whoever the fuck Martell saying "Dorne has haf enough of your bullshit too, peace out." And then the other Kingdoms possibly following suit.

Jon is the oldest Targaryen and Stark, so he is a potential threat to both kingdoms. Even if he doesn't want to be king, as Varys said, someone could use him to start a rebellion.
He's a Queenslayer. Jamie got shit on for killing the Mad King, so there's probably enough people to shit on Jon too. Bad optics for releasing and protecting him.
And finally, Yara and probably some other Westerosi lords are still pissed at him for betraying their queen. Could lead to tensions.
All are meh reasons that aren't even explained in the show, but it could work.
