Dabid stopped caring about the show after they had finished adapting the third book. They wanted to move on to Star Wars so they rushed the last few seasons despite HBO wanting the show to go on longer.
Seasons 1-4 are very faithful to the books despite some missteps. They're an adaption of the first three books.
Season 5 and some of 6 act as a butchered adaptation of books 4 and 5. Season 7-8 is mostly original content that suddenly ends in a way similar to what Martin intended but without the hard work that drove the characters to that point.
As soon as they made the decision to cut out all the new characters and plotlines from Feast and Dance, the show's fate was sealed.

Are you fucking dumb? Their problem (and George's) is that they would not / could not handle the characters and plots they had started. Adding new ones would not have solved that. The only reason George added a fuck ton of new shit is that he has a personal dislike of time skips and needed create all this busywork to wait on the actual main characters to play-out. A Song of Ice and Fire is literally at least 50% filler because the 5-year gap didn't happen and that timeskip didn't happen because he didn't want to have to simply explain to the readers that a lot of major shit may or may not have happened to these other characters off-page, in the meantime. The consequence is the Mereneese Knot and bit waste of your time reading/watching shit that doesn't matter.
