Gut's big sword makes no sense in real life and would not adapt well in a live action film and would be toned down to a more realistic size and that would make weebs sperg the fuck out

You can fix that in the adaptation, all you need is one scene of them huddled around a map and griffith lays out a sound tactical plans. We see him coordinate his crossbow men to ambush the cavalry chasing Guts' raiders so just take another one of those battles and spend the time to show Griffith meticulously planning out something of that nature.

Berserks's main appeal is shock value and gore portrayed thorugh Boschesque visuals. They'd obviously tone down. It doesn't have particularly engaging characters or complex drama.
