They wouldn't have desu, most realistic outcome is the iron throne disbanding. It was only created and held together by a dynasty which had Dragons. The Iron Kingdom is essentially 1 kingdom (crownlands) ruling over 7 others. This is highly untenable. Shortly after the Targaryens dragons died out they lost their total advantage, and had to begin relying on the loyalty of the high lords, which held for awhile because of the built up prestige, but under Aerys it was proven that the kingdom was rather easy to overthrow because all it takes is like more than half of the seven kingdoms revolting and you lose. Dany's fate has nothing to do with ending being happy or bittersweet because she was a villain, Jon is the only character alive who wasn't happy at the end and coupling with what happened to others during the show definitely makes the ending bittersweet.
