With Danys death, Drogon confirms the throne is an outdated relic of a tyranny that will not return, just as he will not return, so he burns it. Dragons are less of a force of nature but a force of myth. It's intentions weren't personal. It signifies that, after the plot, things won't be the same in Westeros, the old way wont return. I think that's on the nose, but cool if it's being done by a creature of prophecy and legend - the last of the dragons.
