I had the impression, that all those "main" houses are basically royalties that control given land and have smaller lords beneath them which all have armies. Meaning, if let's say the leaders of Dorne are dead, the next lord in rank will take their place, not just make a whole region of the world disappear, no? I'm sure, that whoever lord is left in Dorne/the Tyrell/etc lands surely would've wanted to help against the night walkers at least before they reach their lands

Lets go from left to right from at least what I remember.

Betraybirbs are allighned with the north. Baratheons are wiped out with their land falling under cercei’s authority via Joffrey. Houses
Hentai, kitty, woofer and Wyvern are all front and centre right now. You know what their current situations are. House sushi is fucking annihilated as are the lands they come from. The remnants of the people living there are pretty much folded into the northern armies now.

Spain should never have been in the show. They still exist and have been offhandedly put into team Dany with a single throwaway line about a verivuluslyunmentioned Prince.
House plant is a bit up in the air imho. I believe season seven made sure to essentially delete them from the show with highgarden’s sacking seemingly along with their entire population.

I think most of them are extinct or nearly extinct. It's not like int the books with many siblings and cousins and extended family, here it's like one lord and one child (or something similar in various combinations). One battle that goes badly can completely erradicate an ancient great house.
