There are plenty artsy medieval films but none of them capture the GOT tone since GOT isn't arty. If you're still interested try Andrei Rublev, Market Lazarova and The Seventh Seal and The Virgin Spring as someone said above. I've heard Hard to te a God is good too but I haven't seen it.

Also gotta recommend Name of the Rose even though it doesnt share many similarities with GoT, its a lot more grim and plain but arguably one of the most immersive adaptations of said time period.
