Depends on the planet i suppose. I'm sure not every planet is as advanced as the other, so just cutting the population in half seems easier across the board. Plus getting rid of half of the people means less people to go to war with each other or even to get revenge on him. I haven't seen any of these movies, but given the way he killed everyone, all the existing resources and infrastructure is still there.
Perfect conditions for rapid re-population. So even if you are generous with the timing, it's not unrealistic, that the population will have doubled again after a 100 years or so, especially since almost all civilizations are probably now keen to get their numbers up again as fast as possible, ultimately causing the exact opposite of what he tried to achieve.

You can’t just create new resources out of thin air. But you can destroy things and make them vanish. So hmmm maybe destroy the things that need to consume the resources. It also sends a signal to stop consuming so much. If I gave a guido two paychecks he’d be just as broke by next payday. But if I mugged him and took his car (that “eats” into half his budget from gas, payments, insurance) he may realize that he needs to be more cautious all around.

Why do second-rate screenwriters think that they are better writers than comic book writers, they probably thought about the gaping plot holes more than an afternoon coming up with motives to Thanos and realized that giving godlike powers to someone you could easily solve most problems. So they just made him a mad titan. There are other ways to solve population problems than infinite resources like creating parallel universes or changing the fabric of reality to support the population or what ever, anything is possible with limitless power.
