the scene with jon isn't about her just wanting sex, she reaches out to jon who is clearly unwilling and distant to her. she realizes that everyone in westeros will always see her as the invader. jon never really loved her like he loved ygritte. that's why she says "it's fear then". she states right there that she will rule with cruelty rather than love and mercy.
and you're forgetting the biggest loss of the episode before - her dragon. Her dragons are constantly shown as her "children" - it makes sense for her to feel rage over that.
overall i agree the whole thing was rushed (like most of the season) but dany turning mad (like her father) is the logical conclusion to her storyline
