Those writing gigs do not leave that much space to writers. They give you a checklist of things that have to happen in that episode, and then other checklists of things you cannot mention because they are meant to be placed in other episodes. To cut it short, they hand to GRRM a sketch of the episode's plot, he completes the script by filling it with the neessary dialogues and details. At no point he is free to steer the plot into the direction he wants.

The basic outline of Dany going mad is probably going to be in the book but the circumstances leading to it will be much different. Characters like Lady Stoneheart and Young Griff that weren't even included in the show will be prominent - Lady Stoneheart will probably be the one that kills all the Freys rather than Arya and will probably either resurrect Jon Snow or give her life to save Arya (instead of Beric in the show) and Young Griff will probably be on the throne rather than Cersei when Danerys comes to Westeros so her going mad will make more sense

They're easy to read and the first one is alright (bar the stuff with that one kid who kept dreaming about wolves over and over) but by the second you realise none of it is going anywhere. You get that one twist with the invasion at King's Landing being repulsed, probably the best part of the books, but it doesn't come to anything. It's all porn for the sake of porn. Then it just got sillier and sillier, I remember reading the third or the fourth while on holiday and thinking zombie Caitlin was stupid even back then. There's nothing to ruin with this material, having it serialised to the tune of millions of dollars is by and far the best thing the hack could've hoped for.
